INGREDIENTS:
1 large zucchini
½ cauliflower
METHOD:
Step 1: Peel and chop the zucchini and place it in a medium size saucepan with the cauliflower florets.
Step 2: Add water to cover all ingredients.
Step 3: Place saucepan over medium heat and bring to boil.
Step 4: Lower heat and cook zucchini and cauliflower covered for 10 minutes or until tender.
Step 5: Drain zucchini and cauliflower and use a stick mixer or blender to puree.
Step 6: Allow the puree to cool slightly and serve warm.
