Zesty Cauliflower Salad

PREP TIME: 15min

COOK TIME: 10min SERVES: 4


INGREDIENTS:

  • 2 Cauliflower heads, trimmed into florets

  • 1 small bunch parsley, roughly chopped

  • ½ cup pine nuts

  • 1 tbsp Paprika

  • 1 garlic clove minced

  • 50g butter, melted

  • ¼ cup Extra Virgin Olive Oil

  • 2 lemons, juiced

  • 1 tsp salt

METHOD:

  • Step 1: Steam cauliflower in a steaming basket over a pot of boiling water, for 10 minutes or until tender.

  • Step 2: Transfer steamed cauliflower into a serving dish.

  • Step 3: Add olive oil, lemon juice, butter, garlic, pine nuts, paprika, salt and parsley. Toss together well to combine. Step 4: Serve warm
