Watermelon Lime Ice Pops

PREP TIME: 15min

COOK TIME: 12hrs

SERVES: 12

INGREDIENTS:

  • ½ cup orange juice

  • ½ cup water

  • ¼ cup sugar

  • 2 sprigs mint

  • 1kg watermelon, peeled, diced

  • 2 tbsp fresh lime juice


METHOD:

  • Step 1: Combine orange juice, water, mint and sugar in a saucepan. Bring to boil over low heat.

  • Step 2: Boil, until a thick syrup forms.

  • Step 3: Remove the sprigs of mint and transfer syrup into a food processor.

  • Step 4: Add the watermelon and lime juice to the food processor and process until smooth.

  • Step 5: Pour mixture into 12 ice-block moulds, insert sticks and freeze.
