Vegie Rice Paper Rolls

PREP TIME: 30min

SERVES: 5-10

INGREDIENTS:

  • 10 pieces Rice paper sheets

  • 1 carrot, thinly sliced longways

  • 1 cucumber, thinly sliced longways

  • 10g fresh chives

  • ½ red capsicum, thinly sliced longways

  • 10 tbsp mayonnaise

  • 1 tbsp sesame seeds

  • Soy sauce


METHOD:

  • Step 1: Lightly dampen a Rice paper sheet according to packet instructions.

  • Step 2. Place the sheet on a flat workspace and spread with 1 tbsp of Mayonnaise.

  • Step 3: Place 2 slices of carrot, 2 slices of cucumber, 2 slices of capsicum and 3 chives horizontally across the bottom of the sheet.

  • Step 4: Fold the bottom edge over the portion of filling and fold in the sides of the sheet.

  • Step 5: Tightly roll the Rice paper from the bottom up to close.

  • Step 6: Repeat this process with all remaining sheets and filling.

  • Step 7: Sprinkle Rice paper rolls with sesame seeds and serve with Soy dipping sauce.
