INGREDIENTS:
10 pieces Rice paper sheets
1 carrot, thinly sliced longways
1 cucumber, thinly sliced longways
10g fresh chives
½ red capsicum, thinly sliced longways
10 tbsp mayonnaise
1 tbsp sesame seeds
Soy sauce
METHOD:
Step 1: Lightly dampen a Rice paper sheet according to packet instructions.
Step 2. Place the sheet on a flat workspace and spread with 1 tbsp of Mayonnaise.
Step 3: Place 2 slices of carrot, 2 slices of cucumber, 2 slices of capsicum and 3 chives horizontally across the bottom of the sheet.
Step 4: Fold the bottom edge over the portion of filling and fold in the sides of the sheet.
Step 5: Tightly roll the Rice paper from the bottom up to close.
Step 6: Repeat this process with all remaining sheets and filling.
Step 7: Sprinkle Rice paper rolls with sesame seeds and serve with Soy dipping sauce.
