Vegetables Dippers

PREP TIME: 15min

SERVES: 8

INGREDIENTS:

  • 2 carrots

  • 2 celery sticks

  • 1 small red capsicum

  • 1 small yellow capsicum

  • 1 x 400 g tin of chickpeas

  • 1 garlic clove

  • 1 tbsp tahini

  • 1 lemon

  • 1 tbsp olive oil

  • ¼ cup of water

  • ½ tsp salt

  • ¼ tsp pepper


METHOD:

  • Step 1: Drain chickpeas and place them into a food processor.

  • Step 2: Add garlic, tahini, olive oil, water, salt, pepper and juice of one lemon. Process until a smooth Hummus forms.

  • Step 3: Divide Hummus evenly into 8 serving glasses.

  • Step 4: Wash and slice all vegetables into sticks.

  • Step 5: Divide vegetable sticks into 8 equal portions. Stand vegetable sticks upright in the hommus glasses.

  • Step 6: Serve.
