INGREDIENTS:
2 carrots
2 celery sticks
1 small red capsicum
1 small yellow capsicum
1 x 400 g tin of chickpeas
1 garlic clove
1 tbsp tahini
1 lemon
1 tbsp olive oil
¼ cup of water
½ tsp salt
¼ tsp pepper
METHOD:
Step 1: Drain chickpeas and place them into a food processor.
Step 2: Add garlic, tahini, olive oil, water, salt, pepper and juice of one lemon. Process until a smooth Hummus forms.
Step 3: Divide Hummus evenly into 8 serving glasses.
Step 4: Wash and slice all vegetables into sticks.
Step 5: Divide vegetable sticks into 8 equal portions. Stand vegetable sticks upright in the hommus glasses.
Step 6: Serve.
