INGREDIENTS:
1 ⅓ cup plain flour
⅓ cup sprinkles
1 tsp baking powder
¼ tsp salt
100g butter, softened
¾ cup caster sugar
2 eggs
1 tsp vanilla essence
½ cup milk
Vanilla Frosting
200g butter, softened
4 cups icing sugar
1 tbsp vanilla essence
¼ cup milk
¼ cup sprinkles to decorate
METHOD:
Step 1: Preheat oven to 180°C.
Step 2: Line a 12-hole cupcake tray with paper cupcake cases.
Step 3: Combine all ingredients in a large mixing bowl. Mix well, until mixture is smooth.
Step 4: Spoon the mixture into the cupcake holes.
Step 5: Bake at 170°C for approximately 15-20 minutes or until cooked through.
Step 6: Leave cupcakes to completely cool on a cooling rack before frosting.
Step 7: To create frosting, whip butter, icing sugar, vanilla essence and milk together until stiff peaks form.
Step 8: Pipe frosting onto cupcakes and decorate with sprinkles to serve.
