Vanilla Pancakes

PREP TIME: 5min

COOK TIME: 15min SERVES: 4-6

INGREDIENTS:

  • 2 cups self-rising flour

  • 2 eggs

  • ¾ cup sugar

  • 1 tsp vanilla essence

  • 1¾ cup milk

  • Spray oil

  • Toppings

  • 1 punnet strawberries

  • 1 punnet blueberries

  • 2 bananas

  • Chocolate sauce


METHOD:

  • Step 1: Whisk flour, sugar, eggs and vanilla essence in a mixing bowl.

  • Step 2: Gradually whisk in milk to form a smooth mixture.

  • Step 3: Heat a large nonstick frying pan over medium heat.

  • Step 4: Grease pan with spray cooking oil.

  • Step 5: Pour ¼ cup of mixture into pan per pancake.

  • Step 6: Cook each pancake until bubbles appear, then flip until cooked through.

  • Step 7: Stack and serve with a drizzle of chocolate sauce, sliced bananas, strawberries and blueberries.
