INGREDIENTS:
400g canned tuna, lemon infused
4 Tortilla wraps
1 avocado, diced
3 large tomatoes, diced
1/2 red onion, diced
½ cup parsley, chopped
2 colourful bell peppers, diced
3 tbsp olive oil
⅓ cup balsamic vinegar
½ tsp salt
1 limes, quartered
METHOD:
Step 1: Shred the tuna in a large mixing bowl.
Step 2: Add the chopped parsley and the diced avocado, tomato, onion and bell pepper.
Step 3: Drizzle with olive oil and balsamic vinegar and season with salt. Step 4: Toss tuna salad together well to combine.
Step 4: Divide tuna salad into 4 equal portions and fill each tortilla with a portion of tuna salad.
Step 5: Serve each Tuna tortilla open with a wedge of lime.
