Tuna Tortilla

PREP TIME: 10min

SERVES: 4

INGREDIENTS:

  • 400g canned tuna, lemon infused

  • 4 Tortilla wraps

  • 1 avocado, diced

  • 3 large tomatoes, diced

  • 1/2 red onion, diced

  • ½ cup parsley, chopped

  • 2 colourful bell peppers, diced

  • 3 tbsp olive oil

  • ⅓ cup balsamic vinegar

  • ½ tsp salt

  • 1 limes, quartered

METHOD:

  • Step 1: Shred the tuna in a large mixing bowl.

  • Step 2: Add the chopped parsley and the diced avocado, tomato, onion and bell pepper.

  • Step 3: Drizzle with olive oil and balsamic vinegar and season with salt. Step 4: Toss tuna salad together well to combine.

  • Step 4: Divide tuna salad into 4 equal portions and fill each tortilla with a portion of tuna salad.

  • Step 5: Serve each Tuna tortilla open with a wedge of lime.
