PREP TIME: 30min

  • 250g beef mince

  • 1 carrot, diced

  • 1 cup pumpkin, diced

  • 2 potatoes, diced

  • 2 celery sticks, finely sliced

  • ¼ cup frozen peas

  • 4 sheets frozen puff pastry

  • 1 tbsp olive oil

  • 1 tsp salt

  • ¼ tsp ground pepper

  • Step 1: Preheat oven to 180°C.

  • Step 2: Take pastry sheets out of freezer and set aside to defrost.

  • Step 3: Line 2 baking trays with baking paper.

  • Step 4: Place 1 tablespoon of olive oil into a non-stick fry pan and place pan over medium heat.

  • Step 5: Add beef mince to the hot oil and brown the mince with the carrot, pumpkin, potatoes, celery, peas, salt and pepper.

  • Step 6: Remove pan off the heat and set mixture aside.

  • Step 7: On a flat work surface, cut one pastry sheet into four equal squares.

  • Step 8: In the centre of each square place one heaped tbsp of beef mixture.

  • Step 9: Close the pasty by folding the pastry diagonally over the filling to form a triangle shape.

  • Step 10: Crimp the edges of the triangle with a fork and place the pasty on the baking tray.

  • Step 11: Repeat this process with all of the remaining ingredients. Brush all pasties with milk and place in oven to cook for 25 minutes or until golden.
