Tomato Soup

PREP TIME: 10min

COOK TIME: 15min SERVES: 4

INGREDIENTS:

  • 250g soup pasta (any shape)

  • 2 x 400g tins peeled tomatoes

  • 5-7 basil leaves

  • 4 cups of water

  • 1 onion, diced

  • 1 large carrot, diced

  • 2 chicken stock cubes

  • 4 tbsp olive oil

  • 2 garlic cloves

  • 3 tsp salt

  • ½ tsp ground pepper


METHOD:

  • Step 1: Add all ingredients (except the pasta) to a large saucepan. Bring all ingredients to boil on medium heat.

  • Step 2: Once boiled, set heat to low and simmer for 45 minutes. Stir occasionally.

  • Step 3: Puree soup using a stick mixer and set soup aside.

  • Step 4: In a smaller saucepan, cook pasta until Al dente (See packet instructions).

  • Step 5: Drain pasta and add to soup pot.

  • Step 6: Ladle pasta and soup together into a serving bowl.
