INGREDIENTS:
250g soup pasta (any shape)
2 x 400g tins peeled tomatoes
5-7 basil leaves
4 cups of water
1 onion, diced
1 large carrot, diced
2 chicken stock cubes
4 tbsp olive oil
2 garlic cloves
3 tsp salt
½ tsp ground pepper
METHOD:
Step 1: Add all ingredients (except the pasta) to a large saucepan. Bring all ingredients to boil on medium heat.
Step 2: Once boiled, set heat to low and simmer for 45 minutes. Stir occasionally.
Step 3: Puree soup using a stick mixer and set soup aside.
Step 4: In a smaller saucepan, cook pasta until Al dente (See packet instructions).
Step 5: Drain pasta and add to soup pot.
Step 6: Ladle pasta and soup together into a serving bowl.
