Teriyaki Chicken Noodles

COOK TIME: 10min SERVES: 6

INGREDIENTS:

  • 440g thin Hokkien noodles

  • 2 tbsp vegetable oil, divided

  • 500g chicken breast, diced

  • 2 garlic cloves, minced

  • 1 tsp ground ginger

  • 1 tsp vegetable oil

  • 1 cup teriyaki sauce

  • ¼ tbsp soy sauce

  • 2 tsp sesame oil

  • 250g broccoli florets

  • 410g baby corn spears

  • 1 red capsicum, sliced

  • 1 tsp salt

  • ¼ tsp pepper

  • 2 tbsp sesame seeds


METHOD:

  • Step 1: Cook and drain noodles according to packet instructions. Set aside.

  • Step 2: Place vegetable oil and sesame oil in a wok. Heat wok over medium heat.

  • Step 3: Once the wok has heated, add the diced chicken and capsicum. Stir fry for 3 minutes.

  • Step 4: Add the soy sauce, teriyaki sauce, ginger, garlic, corn spears and broccoli. Stir fry for a further 3 minutes.

  • Step 5: Add the cooked Hokkien noodles and stir fry for a further 2 minutes.

  • Step 6: Season with salt and pepper and garnish with sesame seeds to serve.
