Tasty Tacos

PREP TIME: 10min

COOK TIME: 20min SERVES: 6

INGREDIENTS:

  • 1kg minced beef

  • 2 tbsp olive oil

  • 2 small onions, finely diced

  • 2 garlic cloves, minced

  • 800g tinned crushed tomato

  • ½ cup water

  • 2 tbsp ground cumin

  • 2 tbsp ground coriander

  • ½ tsp pepper ground

  • 2 tsp salt

  • 18 taco shells

  • ¼ iceberg lettuce, shredded

  • 3 large tomatoes, diced

  • 300g, tasty cheese, grated

  • 150g, mexican salsa (optional)

  • 200g sour cream (optional)


METHOD:

  • Step 1: Heat oil in a large non-stick fry pan over low-medium heat.

  • Step 2: Gently fry mince with onion and garlic, until browned.

  • Step 3: Add the crushed tomato, water, cumin, coriander, salt and pepper.

  • Step 4: Simmer over a low heat for 20 minutes, stirring occasionally.

  • Step 5: Meanwhile, wash and shred the iceberg lettuce and dice the tomatoes.

  • Step 6: Heat the taco shells according to packet instructions.

  • Step 7: Serve cooked mince in warm shells, topped with a dollop of salsa or sour cream, shredded lettuce, diced tomato and grated cheese.
