INGREDIENTS:
1kg minced beef
2 tbsp olive oil
2 small onions, finely diced
2 garlic cloves, minced
800g tinned crushed tomato
½ cup water
2 tbsp ground cumin
2 tbsp ground coriander
½ tsp pepper ground
2 tsp salt
18 taco shells
¼ iceberg lettuce, shredded
3 large tomatoes, diced
300g, tasty cheese, grated
150g, mexican salsa (optional)
200g sour cream (optional)
METHOD:
Step 1: Heat oil in a large non-stick fry pan over low-medium heat.
Step 2: Gently fry mince with onion and garlic, until browned.
Step 3: Add the crushed tomato, water, cumin, coriander, salt and pepper.
Step 4: Simmer over a low heat for 20 minutes, stirring occasionally.
Step 5: Meanwhile, wash and shred the iceberg lettuce and dice the tomatoes.
Step 6: Heat the taco shells according to packet instructions.
Step 7: Serve cooked mince in warm shells, topped with a dollop of salsa or sour cream, shredded lettuce, diced tomato and grated cheese.
