Tandoori Chicken with Rice

PREP TIME: 10min

COOK TIME: 50min SERVES: 6

INGREDIENTS:

  • 6 chicken breasts

  • 1 ½ cups plain yogurt

  • 2 garlic cloves, minced

  • 2 tsp ground ginger

  • 2 tbsp lemon juice

  • 2 tbsp olive oil

  • 2 tsp Garam Marsala

  • 2 cups fresh coriander, chopped (divided)

  • 1 tsp paprika

  • ¼ tsp ground pepper

  • 1 tsp turmeric

  • 1 tsp salt

  • 2 cups rice

  • Lime wedges to serve


METHOD:

  • Step 1: Preheat oven to 180°C.

  • Step 2: Grease a large baking dish with olive oil spray.

  • Step 3: Place the yogurt, garlic, ginger, lemon juice, 2 tbsp olive oil, turmeric, garam marsala, paprika and 1 cup of chopped coriander into the baking dish. Mix well to combine.

  • Step 4: Add the chicken to the baking dish and turn to coat and marinade in the mixture.

  • Step 5: Bake for 50 minutes or until chicken is cooked through.

  • Step 6: Meanwhile, cook the 2 cups of rice according to packet instructions.

  • Step 7: Garnish the Tandoori chicken and cooked rice with the remaining coriander. Serve chicken and rice, along with lime wedges.
