INGREDIENTS:
6 chicken breasts
1 ½ cups plain yogurt
2 garlic cloves, minced
2 tsp ground ginger
2 tbsp lemon juice
2 tbsp olive oil
2 tsp Garam Marsala
2 cups fresh coriander, chopped (divided)
1 tsp paprika
¼ tsp ground pepper
1 tsp turmeric
1 tsp salt
2 cups rice
Lime wedges to serve
METHOD:
Step 1: Preheat oven to 180°C.
Step 2: Grease a large baking dish with olive oil spray.
Step 3: Place the yogurt, garlic, ginger, lemon juice, 2 tbsp olive oil, turmeric, garam marsala, paprika and 1 cup of chopped coriander into the baking dish. Mix well to combine.
Step 4: Add the chicken to the baking dish and turn to coat and marinade in the mixture.
Step 5: Bake for 50 minutes or until chicken is cooked through.
Step 6: Meanwhile, cook the 2 cups of rice according to packet instructions.
Step 7: Garnish the Tandoori chicken and cooked rice with the remaining coriander. Serve chicken and rice, along with lime wedges.
