Summer Salad

PREP TIME: 15min

SERVES: 6

INGREDIENTS:

  • ¼ Watermelon, diced

  • 500g colourful cherry tomatoes, halved

  • ½ cup feta, crumbled

  • 1 Cos lettuce, shredded

  • ¼ red onion, thinly sliced

  • 3 sprigs mint, finely chopped

  • Olive oil

  • Salt


METHOD:

  • Step 1: Wash the Cos lettuce and shred.

  • Step 2: Place the shredded lettuce in a large salad bowl, with the diced watermelon, halved tomatoes, crumbled feta, sliced onion and chopped mint.

  • Step 3: Drizzle ingredients with olive oil and season with salt.

  • Step 4: Toss together to combine.

  • Step 5: Serve.
