SERVES: 10-20
INGREDIENTS:
750g fresh strawberries, hulled and sliced
1 ⅔ cups fresh lemon juice
1/3 cup caster sugar
1.25L sparkling water
½ tsp vanilla essence
1 lemon, sliced to serve
Fresh mint leaves, to garnish
METHOD:
Step 1. Blend strawberries in a blender until smooth. Strain strawberry juice into a serving jug and dispose of pulp.
Step 2: Add vanilla essence, lemon juice and sugar to the jug. Stir until sugar dissolves.
Step 3: Mix in sparkling water.
Step 4: Serve over ice with mint leaves and lemon slices.
