St. Patrick's Day Cupcakes

COOK TIME: 20min SERVES: 12

INGREDIENTS:


Cupcakes

  • 1 ⅓  cup plain flour

  • 3 drops green food colouring

  • 1 tsp baking powder

  • ¼ tsp salt

  • 100g butter, softened

  • ¾  cup caster sugar

  •  2 eggs

  • 1 tsp vanilla essence

  • ½ cup milk


Vanilla Frosting

  •    200g butter, softened

  •    4 cups icing sugar

  •    1 tbsp vanilla essence

  •    ¼ cup milk


METHOD:

  • Step 1: Preheat oven to 180°C. 

  • Step 2: Line a 12-hole cupcake tray with paper cupcake cases.

  • Step 3: Combine all ingredients in a large mixing bowl. Mix well, until mixture is smooth.

  • Step 4: Spoon the mixture into the cupcake holes.

  • Step 5: Bake at 170°C for approximately 15-20 minutes or until cooked through. 

  • Step 6: Leave cupcakes to completely cool on a cooling rack before frosting.

  • Step 7: To create frosting, whip butter, icing sugar, vanilla essence and milk together until stiff peaks form. 

  • Step 8: Pipe frosting onto cupcakes and serve.
