Spinach Omelettes

PREP TIME: 10min

COOK TIME: 5min SERVES: 4

INGREDIENTS:

  • 4 eggs, beaten

  • 1 cup spinach leaves, finely chopped

  • ½ cup chives, finely chopped

  • ½ cup milk

  • ½ cup parmesan, grated

  • 1 tsp salt

  • ¼ tsp ground pepper

  • Spray olive oil


METHOD:

  • Step 1: Beat eggs, milk, salt and pepper in a mixing bowl.

  • Step 2: Add chives, spinach and parmesan. Stir to combine.

  • Step 3: Place 4 egg rings in a non stick fry pan and spray the pan and rings with oil.

  • Step 4: Heat pan over medium heat and then pour mixture into the egg rings.

  • Step 5: Cook omelettes on low heat for 2 minutes or until the bottom of the omelettes set.

  • Step 6: Meanwhile turn on the oven grill function and heat up grill.

  • Step 7: Remove pan from stove top and place under the grill to cook the top of the omelettes. Grill omelettes for 2 minutes or until eggs completely sets on top.

  • Step 8: Carefully remove egg rings and serve.
