INGREDIENTS:
4 eggs, beaten
1 cup spinach leaves, finely chopped
½ cup chives, finely chopped
½ cup milk
½ cup parmesan, grated
1 tsp salt
¼ tsp ground pepper
Spray olive oil
METHOD:
Step 1: Beat eggs, milk, salt and pepper in a mixing bowl.
Step 2: Add chives, spinach and parmesan. Stir to combine.
Step 3: Place 4 egg rings in a non stick fry pan and spray the pan and rings with oil.
Step 4: Heat pan over medium heat and then pour mixture into the egg rings.
Step 5: Cook omelettes on low heat for 2 minutes or until the bottom of the omelettes set.
Step 6: Meanwhile turn on the oven grill function and heat up grill.
Step 7: Remove pan from stove top and place under the grill to cook the top of the omelettes. Grill omelettes for 2 minutes or until eggs completely sets on top.
Step 8: Carefully remove egg rings and serve.
