Roasted Corn - (GF, EF, NF)

Gluten Free, Egg Free & Nut Free


PREP TIME: 5min

COOK TIME: 25min SERVES: 4

INGREDIENTS:

  • 4 cobs of corn

  • 4 long bamboo skewers

  • 1 litre of water

  • 1 tbsp garlic oil

  • 2 sprigs parsley, finely chopped

  • 100g parmesan, grated

  • 1 lime

  • ½ tsp salt


METHOD:

  • Step 1: Soak bamboo skewers in a bowl of water for 15 minutes.

  • Step 2: Preheat oven to 180°C and grease a large baking tray with spray oil.

  • Step 3: Remove silk and husks off corn.

  • Step 4: Insert one bamboo skewers into corn cob.

  • Step 5: Place corn on baking tray. Drizzle with garlic oil and season with salt.

  • Step 6: Roast corn for 20-25 minutes.

  • Step 7: Sprinkle chopped parsley and grated cheese over the cooked corn.

  • Step 8: Cut the lime into wedges and serve alongside the cheesy corn.
