Roasted Chicken Drumsticks

PREP TIME: 10min

COOK TIME: 50min SERVES: 6

INGREDIENTS:

  • 1.2kg chicken drumsticks

  • 250g cherry tomatoes, halved

  • 400g mushrooms, sliced

  • 1 white onion, sliced

  • 5 garlic cloves

  • ½ cup lemon juice

  • 3 sprigs rosemary

  • Spray Olive Oil

  • Salt

  • Pepper


METHOD:

  • Step 1: Preheat oven to 200°C.

  • Step 2: Line a baking dish with baking paper and spray with olive oil.

  • Step 3: Wash garlic cloves (skin on) and place whole in baking dish.

  • Step 4: Add the halved cherry tomatoes,  sliced onion and sliced mushrooms to the dish. Mix together to combine.

  • Step 5: Place the chicken drumsticks on top of the mixed vegetables.

  • Step 6: Roughly chop the rosemary sprigs and scatter throughout the dish.

  • Step 7: Drizzle the lemon juice over the chicken.

  • Step 8: Spray the chicken and vegetable with spray oil and season with salt and pepper.

  • Step 9: Roast for 50 minutes or until chicken is cooked through.
