1.2kg chicken drumsticks
250g cherry tomatoes, halved
400g mushrooms, sliced
1 white onion, sliced
5 garlic cloves
½ cup lemon juice
3 sprigs rosemary
Spray Olive Oil
Step 1: Preheat oven to 200°C.
Step 2: Line a baking dish with baking paper and spray with olive oil.
Step 3: Wash garlic cloves (skin on) and place whole in baking dish.
Step 4: Add the halved cherry tomatoes, sliced onion and sliced mushrooms to the dish. Mix together to combine.
Step 5: Place the chicken drumsticks on top of the mixed vegetables.
Step 6: Roughly chop the rosemary sprigs and scatter throughout the dish.
Step 7: Drizzle the lemon juice over the chicken.
Step 8: Spray the chicken and vegetable with spray oil and season with salt and pepper.
Step 9: Roast for 50 minutes or until chicken is cooked through.
