INGREDIENTS:
2kg lamb leg
1.5kg washed potatoes
2 red onions, quartered
4 garlic cloves, whole
4 garlic cloves, chopped
3 sprigs of rosemary, chopped
3 bay leaves
1 tbsp lemon rind
¼ cup lemon juice
½ cup soy sauce
½ cup olive oil
1 tsp salt
1 tsp saffron
½ tsp ground pepper

METHOD:
Step 1: Preheat oven to 200°C.
Step 2: Place the lamb leg in the centre of a large roasting dish.
Step 3: Pour the olive oil, lemon rind, lemon juice, soy sauce, chopped garlic, rosemary sprigs, saffron and parsley over the lamb.
Step 4: Turn to coat and marinade in the mixture. Rub mixture into the lamb.
Step 5: Half the potatoes and parboil them in a saucepan of water for 5 minutes.
Step 6: Drain the potatoes and place them around the lamb in the roasting dish, along with the whole garlic cloves and quartered red onions.
Step 7: Lightly spray vegetables with spray oil.
Step 8: Season dish with salt and pepper and place in oven to roast for 1 hour 30 minutes.
