Rigatoni Broccoli & Peas

PREP TIME: 10min

COOK TIME: 20min SERVES: 6

INGREDIENTS:

  • 500g Rigatoni pasta

  • 500g frozen broccoli florets

  • 1 cup frozen peas

  • 1 litre water

  • 2 garlic cloves, minced

  • ¾ cup olive oil

  • ¾ cup parmesan, grated

  • Salt

  • Pepper

  • 3 Basil sprigs


METHOD:

  • Step 1: Place water in a large saucepan.

  • Step 2: Salt the water with 1 teaspoon of salt and bring the salted water to boil.

  • Step 3: Add the peas, broccoli florets and Rigatoni to the boiling water to cook.

  • Step 4: When the Rigatoni is Al dente (See packet instructions), drain it together with the broccoli and peas.

  • Step 5: Return Rigatoni, broccoli and peas to the saucepan.

  • Step 6: Stir in the oil, minced garlic and parmesan. Season with salt and pepper and mix all ingredients together to combine.

  • Step 7: Garnish with basil leaves to serve.
