500g Rigatoni pasta
500g frozen broccoli florets
1 cup frozen peas
1 litre water
2 garlic cloves, minced
¾ cup olive oil
¾ cup parmesan, grated
3 Basil sprigs
Step 1: Place water in a large saucepan.
Step 2: Salt the water with 1 teaspoon of salt and bring the salted water to boil.
Step 3: Add the peas, broccoli florets and Rigatoni to the boiling water to cook.
Step 4: When the Rigatoni is Al dente (See packet instructions), drain it together with the broccoli and peas.
Step 5: Return Rigatoni, broccoli and peas to the saucepan.
Step 6: Stir in the oil, minced garlic and parmesan. Season with salt and pepper and mix all ingredients together to combine.
Step 7: Garnish with basil leaves to serve.
