250g spiral pasta
1 litre water
250g ricotta cheese
3 tbsp of olive oil
Step 1: Place water in a large saucepan.
Step 2: Salt the water with 1 teaspoon of salt and bring the salted water to boil.
Step 3: Once boiling add the pasta and cook until Al dente (see packet instructions).
Step 4: Drain the pasta and return back to the saucepan.
Step 5: Add the ricotta cheese and olive oil to the pasta. Mix well to coat and season with salt and pepper.
Step 6: Dollop the remainder of the fresh ricotta on top to serve.
