Ricotta & Spinach Cannelloni

PREP TIME: 15min

COOK TIME: 40min SERVES: 6

INGREDIENTS:

  • 700g passata

  • 250g Cannelloni pasta

  • 600g ricotta

  • 250g spinach, chopped

  • 2 tbsp parsley, chopped

  • 2 tbsp basil chopped

  • ¼ cup parmesan, grated

  • 1 cup mozzarella, grated

  • 1 garlic clove, chopped

  • 1 tsp lemon rind

  • 2 tbsp lemon juice

  • Spray Olive oil

  • Salt

  • Pepper


METHOD:

  • Step 1: Preheat oven to 180°C.

  • Step 2: Line a baking dish with spray oil.

  • Step 3: Spread 1 cup of the passata evenly around the bottom of the dish.

  • Step 4: Sprinkle the chopped garlic and lemon juice over the passata and lightly season with salt and pepper.

  • Step 5: In a large mixing bowl combine the ricotta, spinach, parsley, basil, parmesan, ½ tsp salt, ¼ tsp pepper and lemon rind.

  • Step 6: Pipe the ricotta mixture into the cannelloni tubes and lay the filled tubes in the dish.

  • Step 7: Pour the remainder of the Passata evenly over the tubes.

  • Step 8: Top with grated mozzarella and cover the dish with foil.

  • Step 9: Bake for 25 minutes covered. Remove foil and bake for another 15 minutes uncovered.
