250g Cannelloni pasta
250g spinach, chopped
2 tbsp parsley, chopped
2 tbsp basil chopped
¼ cup parmesan, grated
1 cup mozzarella, grated
1 garlic clove, chopped
1 tsp lemon rind
2 tbsp lemon juice
Spray Olive oil
Step 1: Preheat oven to 180°C.
Step 2: Line a baking dish with spray oil.
Step 3: Spread 1 cup of the passata evenly around the bottom of the dish.
Step 4: Sprinkle the chopped garlic and lemon juice over the passata and lightly season with salt and pepper.
Step 5: In a large mixing bowl combine the ricotta, spinach, parsley, basil, parmesan, ½ tsp salt, ¼ tsp pepper and lemon rind.
Step 6: Pipe the ricotta mixture into the cannelloni tubes and lay the filled tubes in the dish.
Step 7: Pour the remainder of the Passata evenly over the tubes.
Step 8: Top with grated mozzarella and cover the dish with foil.
Step 9: Bake for 25 minutes covered. Remove foil and bake for another 15 minutes uncovered.
