Rainbow Ombre Cake

PREP TIME: 30min

COOK TIME: 40min SERVES: 10-12

INGREDIENTS:

Cake batter

  • 250g unsalted butter, softened

  • 1/2 cup milk

  • 1/2 cup orange juice

  • 4 eggs

  • 1 ½ cups caster sugar

  • 3 cups self-raising flour sifted

  • 2 tbsp orange zest

  • 1 drop red food colouring

  • 1 drop orange food colouring

  • 1 drop yellow food colouring

  • 1 drop green food colouring

  • 1 drop blue food colouring

  • 1 drop purple food colouring

Vanilla Frosting

  • 500g butter softened

  • 6 cups icing sugar sifted

  • ½ cup milk

  • 1 tsp vanilla essence

  • 100g rainbow sprinkles

METHOD:

  • Step 1: Grease an ombre layer cake tin with spray oil and pre-heat oven to 180°C.

  • Step 2: Make the cake batter, by placing the butter, milk, orange juice, eggs, sugar and zest in a large mixing bowl. Beat together well to combine.

  • Step 3: Divide the batter into 6 equal parts by pouring it into the 6 ombre layer pans.

  • Step 4: Add a different colour drop of food colouring to each pan. Stir the colour into the batter until the batter thoroughly changes colour

  • Step 5: Bake each layer for 30-40 minutes on 180°C.

  • Step 6: Meanwhile, beat all frosting ingredients together until smooth and well combined.

  • Step 7: Once cake layers have cooked and cooled, frost between each layer and stack.

  • Step 8: Frost the outer of the cake and decorate with rainbow sprinkles.
