INGREDIENTS:
225g pumpkin, chopped
1 tbsp olive oil
½ onion, diced
1 potato, chopped
1 chicken stock cubes
5 cups water
METHOD:
Step 1: Heat oil in a large saucepan over medium heat.
Step 2: Add the diced onion and gently fry for 2 minutes.
Step 3: Next, add the water, stock cubes, chopped potatoes and chopped pumpkin.
Step 4: Bring all ingredients to the boil and then lower heat and simmer for 25 minutes.
Step 5: Puree soup with a stick mixer.
Step 6: Continue to simmer for 2 more minute.
Step 7: Allow the soup to cool slightly and serve warm.
