Potato Zucchini Soup

PREP TIME: 5min

COOK TIME: 30min SERVES: 4-6

INGREDIENTS:

  • 1 large zucchini, chopped

  • 1 tbsp olive oil

  • ½ onion, diced

  • 2 potatoes, chopped

  • 1 chicken stock cubes

  • 5 cups water


METHOD:

  • Step 1: Heat oil in a large saucepan over medium heat.

  • Step 2: Add the diced onion and gently fry for 2 minutes.

  • Step 3: Next add the water, stock cubes, chopped potatoes and chopped zucchini.

  • Step 4: Bring all ingredients to the boil and then lower heat and simmer for 25 minutes.

  • Step 5: Puree soup with a stick mixer.

  • Step 6: Continue to simmer for 2 more minutes.

  • Step 7: Allow the soup to cool slightly and serve warm.
