Potato & Chorizo Sticks

  • 500g baby washed potatoes

  • 250g Chorizo

  • 3 spring onions, finely chopped

  • Spray Olive oil

  • ½ tsp salt

  • ½ tsp oregano


  • Step 1: Soak 12 bamboo skewers in water for 15 minutes.

  • Step 2: Preheat oven to 180°C and line a large baking tray baking paper and spray oil.

  • Step 3: Slice the potatoes and the Chorizos into 1cm thick slices.

  • Step 4: Thread the potato slices and the Chorizo slices onto the bamboo skewers, alternating one potato slice followed by a Chorizo slice.

  • Step 5: Lay the threaded skewers on the lined baking tray and spray them with Olive oil and season with salt and oregano.

  • Step 6: Bake for 25-30minutes or until potato is cooked through.

  • Step 7: Once cooked, garnish with spring onions to serve.
