INGREDIENTS:
4 large potatoes
1 ½ cups parmesan, grated
¼ cup parsley, finely chopped
1 garlic clove, minced
1 egg
2 eggs, lightly beaten
1 cup plain flour
2 cups breadcrumbs
1 tsp salt
¼ tsp ground pepper
Olive oil spray
METHOD:
Step 1: Wash and peel potatoes.
Step 2: In a large saucepan, boil potatoes for 8-10 minutes or until softened.
Step 3: Drain potatoes and return to saucepan. Mash potatoes with a potato masher and leave to cool for 10 minutes.
Step 4: Preheat oven to 180°C.
Step 5: Line a baking tray with baking paper.
Step 6: Spray baking paper with spray oil.
Step 7: Once potatoes have cooled, add 1 egg, parmesan cheese, parsley, garlic, 1 teaspoon of salt and ¼ teaspoon of pepper to the saucepan. Mix all ingredients together with a wooden spoon.
Step 8: Take one tablespoon of potato mixture and roll to form a log shape.
Step 9: Repeat this rolling method to create 12 potato mixture logs.
Step 10: Line up 3 shallow bowls. Place the flour in one, 2 lightly beaten eggs in the second and the bread crumbs in the third.
Step 11: Roll each log in flour. Dip in the egg and then coat evenly with breadcrumbs.
Step 12: Place crumbed logs neatly on the lined baking tray.
Step 13: Spray with olive oil.
Step 14: Bake for 20 minutes or until golden.
