INGREDIENTS:
250g Polenta (instant)
1 cup Parmesan cheese
Salt
Pepper
Spray Oil
METHOD:
Step 1: Line a cookie tray with baking paper.
Step 2: Cook the Polenta according to packet instructions.
Step 3: Once cooked, stir the Parmesan cheese through the Polenta and season with salt and pepper.
Step 4: Pour the mixture onto the lined cookie tray. Place the tray into the refrigerator for 30 minutes to cool.
Step 5: Meanwhile, preheat oven to 200°C.
Step 6: Line a second baking tray with baking paper and spray oil.
Step 7: Once the mixture is cool and has set firm, cut the mixture into 2cm wide chips and place on the second baking tray.
Step 8: Spray the Polenta chips with spray oil, season with more salt and bake for 20 minutes or until golden and crunchy.
