Polenta Chips

PREP TIME: 5min

COOK TIME: 1hr SERVES: 4

INGREDIENTS:

  • 250g Polenta

  • 1 cup Parmesan cheese

  • Salt

  • Pepper

  • Spray Oil


METHOD:

  • Step 1: Line a cookie tray with baking paper.

  • Step 2: Cook the Polenta according to packet instructions.

  • Step 3: Once cooked, stir the Parmesan cheese through the Polenta and season with salt and pepper.

  • Step 4: Pour the mixture onto the lined cookie tray. Place the tray into the refrigerator for 30 minutes to cool.

  • Step 5: Meanwhile, preheat oven to 200°C.

  • Step 6: Line a second baking tray with baking paper and spray oil.

  • Step 7: Once the mixture is cool and has set firm, cut the mixture into 2cm wide chips and place on the second baking tray .

  • Step 8: Spray the Polenta chips with spray oil, season with more salt and bake for 20 minutes or until golden and crunchy.
