Peppermint Ice Cream Cookie

  • 12 large chocolate chip cookies

  • 300g vanilla ice cream

  • ½ cup chocolate chips

  • 1 drop of peppermint essence

  • 1 drop green food colouring


  • Step 1: Line a large freezer safe container with baking paper.

  • Step 2: Place 6 cookies onto the paper (flat sides up) and set container aside.

  • Step 3: Place the vanilla ice cream, chocolate chips, peppermint essence and green food colouring into a large mixing bowl. Beat together to combine.

  • Step 4: Place 3 tbsp of mint ice cream mixture into the centre of each prepared cookie.

  • Step 5: Top the icecream with a second cookie, pressing firmly down to sandwich the ice cream inside.

  • Step 6: With a spatula, smooth out any ice cream overflow. Give each cookie sandwich a smooth edging finish.

  • Step 7: Close the freezer safe container and freeze cookie sandwiches for 4 hours before serving.
