Peppermint Candy Cane Ice Cream

PREP TIME: 15min

SERVES: 10-20

INGREDIENTS:

  • 4 drops peppermint essence

  • 2 drops red food colouring

  • 2 litres vanilla ice cream

  • 5 candy canes

  • ½ cup red sprinkles

  • ½ cup green sprinkles


METHOD:

  • Step 1: Remove the vanilla ice cream out of the freezer and set aside to slightly soften. 

  • Step 2: Place the candy canes into a food processor and process into a fine crumb.

  • Step 3: Transfer the candy cane crumb into a large mixing bowl. 

  • Step 4: Add the vanilla ice cream, the peppermint essence and the sprinkles.

  • Step 5: Using an electric mixer, mix all of these ingredients together until smooth. 

  • Step 6: Add the drops of food colouring and using a spatula, fold the food colouring through the ice cream to create a red swirl effect. 

  • Step 7: Pour the candy cane ice cream baCK into a 2.5L freezer safe container and place in the freezer to set.

  • Step 8: Serve, when the ice cream has firmly refrozen.
