PREP TIME: 15min
4 drops peppermint essence
2 drops red food colouring
2 litres vanilla ice cream
5 candy canes
½ cup red sprinkles
½ cup green sprinkles
Step 1: Remove the vanilla ice cream out of the freezer and set aside to slightly soften.
Step 2: Place the candy canes into a food processor and process into a fine crumb.
Step 3: Transfer the candy cane crumb into a large mixing bowl.
Step 4: Add the vanilla ice cream, the peppermint essence and the sprinkles.
Step 5: Using an electric mixer, mix all of these ingredients together until smooth.
Step 6: Add the drops of food colouring and using a spatula, fold the food colouring through the ice cream to create a red swirl effect.
Step 7: Pour the candy cane ice cream baCK into a 2.5L freezer safe container and place in the freezer to set.
Step 8: Serve, when the ice cream has firmly refrozen.
