INGREDIENTS:
1 leg ham, boneless
1 cup orange juice, freshly squeezed
¾ cup port
½ cup brown sugar
Peppercorns to stud
METHOD:
Step 1: Cook orange juice , sugar and port in a small saucepan over low heat. Simmer for 20-30 minutes until a shiny glaze forms.
Step 2: Preheat oven to 150°C.
Step 3: Place ham on a wire rack, over a roasting tray. With a sharp knife score diamond patterns into the outer skin of the ham and stud with peppercorns.
Step 4: Generously baste ham with orange glaze and cook for 10 minutes.
Step 5: Remove ham from oven and baste again with orange glaze. Cook for another 10 minutes.
Step 6: Repeat this basting process every 10 minutes for an hour or until ham is golden and caramelized.
