INGREDIENTS:
3 sheets frozen puff pastry
500g frozen mixed berries
2 tbsp granulated sugar
2 tbsp cornflour
3 sprigs mint
Honey to drizzle
METHOD:
Step 1: Preheat oven to 200°C degrees and line a large baking tray with baking paper.
Step 2: Place 3 sheets of puff pastry on a flat working space.
Step 3: Cut each sheet into 4 equal squares.
Step 4: Place all 12 pastry squares onto the baking tray.
Step 5: Cut a 2cm border inside the edge of each square, however do not cut all the way through.
Step 6: In a mixing bowl combine the mixed berries, cornflour and sugar.
Step 7: Place 1 tbsp of berry mixture into the centre of each puff pastry square.
Step 8: Cook for 10 minutes or until pastry is golden.
Step 9: Garnish with mint leaves and drizzle with honey to serve.
