Mini Pizzas

PREP TIME: 15min

COOK TIME: 15min SERVES: 4-6

INGREDIENTS:

  • 6 mini pizza bases

  • 1 x 400g tin crushed tomatoes

  • 1 tbsp olive oil

  • 1 tsp dried oregano

  • ½ tsp salt

  • 1 tsp garlic, minced

  • 2 cups Mozzarella cheese

  • 100g shredded ham

  • 100g mild salami, shaved

  • 1 yellow capsicum, sliced

  • 1 red capsiscum, sliced

  • 200g olives sliced (black or green)

  • Olive oil spray


METHOD:

  • Step 1: Preheat oven to 180°C. Line a baking tray with baking paper and spray oil.

  • Step 2: Lay the 6 mini pizza bases on the baking tray.

  • Step 3: In a small bowl, combine the crushed tomatoes, olive oil, oregano, salt and garlic. Mix well.

  • Step 4: With a spoon evenly spread a thin layer of the tomato mixture on top of each mini pizza base.

  • Step 5: Sprinkle a second layer of mozzarella cheese.

  • Step 6: Top the mini pizzas with any combination of ham, salami, capsicum and olives.

  • Step 7: Spray each mini pizza with olive oil and cook in the oven for 10-15 minutes.
