150g butter, softened
80g caster sugar
2 tsp vanilla extract
225g plain flour
1 tbsp cocoa
½ tsp bi carb soda
¼ tsp salt
200g chocolate chips
25g candy eyeballs
Step 1: Preheat the oven to 180C°.
Step 2: Line two large cookie trays with baking paper.
Step 3: Place the butter, vanilla essence, cocoa, brown sugar and caster sugar into a large mixing bowl. Beat until creamy.
Step 4: Add the egg, flour, salt and bi carb soda and continue to beat to combine.
Step 5: Fold in the coloured chocolate chips.
Step 6: With a tablespoon scoop out heaped spoonfuls of cookie mixture. Place each spoonful neatly spaced out on the prepared baking tray. Use the spoon to round and flatten each spoonful of mixture. The batch should make about 16 cookies (8 per tray).
Step 7: Bake for 10 mins or until golden brown.
Step 8: Carefully, place cookies on a cooling rack.
Step 9: Press two Candy eyeballs into each cookie whilst cooling.
