INGREDIENTS:
440g Udon noodles
500g chicken breast, diced
1 tbsp vegetable oil
2 garlic cloves, minced
1 white onion, sliced
1 red capsicum, sliced
½ cup honey
¼ cup soy sauce
2 tbsp hoisin sauce
4 spring onions, sliced
METHOD:
Step 1: Cook and drain noodles according to packet instructions. Set aside.
Step 2: Place 1 tbsp of vegetable oil in a wok. Heat wok over medium heat.
Step 3: Once the wok has heated, add the diced chicken, white onion and capsicum. Stir fry for 3 minutes.
Step 4: Add the soy sauce, honey, hoisin sauce and garlic. Stir fry for a further 2 minutes.
Step 5: Add the cooked Udon noodles and stir fry for a further 2 minutes.
Step 6: Season with salt and pepper and garnish with spring onions to serve.
