Garlic Prawn Skewers

COOK TIME: 5min SERVES: 8

INGREDIENTS:

  • 500g raw green prawns, peeled

  • 2 cups fresh parsley

  • 2 garlic cloves

  • 1 cup lemon juice

  • 3 tbsp olive oil

  • 1 tsp salt

  • ¼ tsp ground pepper


METHOD:

  • Step 1: Soak 8 bamboo skewers in a bowl of water for 15 minutes.

  • Step 2: Place the parsley, garlic, lemon juice, olive oil, salt and pepper into a food processor. Process to form a garlic marinade.

  • Step 3: Combine the prawns and marinade in a large mixing bowl. Mix together to coat prawns well.

  • Step 4: Thread 3-4 prawns onto each skewer and grill on a hotplate or bbq for 5 minutes or until cooked through.
