INGREDIENTS:
500g raw green prawns, peeled
2 cups fresh parsley
2 garlic cloves
1 cup lemon juice
3 tbsp olive oil
1 tsp salt
¼ tsp ground pepper
METHOD:
Step 1: Soak 8 bamboo skewers in a bowl of water for 15 minutes.
Step 2: Place the parsley, garlic, lemon juice, olive oil, salt and pepper into a food processor. Process to form a garlic marinade.
Step 3: Combine the prawns and marinade in a large mixing bowl. Mix together to coat prawns well.
Step 4: Thread 3-4 prawns onto each skewer and grill on a hotplate or bbq for 5 minutes or until cooked through.
