INGREDIENTS:
4 eggs, beaten
¾ cup milk
½ cups self-rising flour
½ zucchini, grated
½ cup peas
½ cup corn
50g ham, shredded
½ cup mozzarella, shredded
1 tsp garlic, minced
1 tsp salt
1 tsp olive oil
¼ tsp ground pepper
1 tsp parsley, dried (optional)
12 patty cases
METHOD:
Step 1: Preheat oven to 180°C.
Step 2: Place patty cases in a 12-hole muffin tray.
Step 3: Mix all ingredients together in a mixing bowl.
Step 4: Spoon the mixture evenly into the patty cases.
Step 5: Bake for 10-15 minutes, or until egg sets.
