Frittata Muffins

PREP TIME: 10min

COOK TIME: 15min SERVES: 4

INGREDIENTS:

  • 4 eggs, beaten

  • ¾ cup milk

  • ½ cups self-rising flour

  • ½ zucchini, grated

  • ½ cup peas

  • ½ cup corn

  • 50g ham, shredded

  • ½ cup mozzarella, shredded

  • 1 tsp garlic, minced

  • 1 tsp salt

  • 1 tsp olive oil

  • ¼ tsp ground pepper

  • 1 tsp parsley, dried (optional)

  • 12 patty cases


METHOD:

  • Step 1: Preheat oven to 180°C.

  • Step 2: Place patty cases in a 12-hole muffin tray.

  • Step 3: Mix all ingredients together in a mixing bowl.

  • Step 4: Spoon the mixture evenly into the patty cases.

  • Step 5: Bake for 10-15 minutes, or until egg sets.
