700g flathead tails, filleted
1 teaspoon garlic, minced
1 cup panko breadcrumbs
⅔ cup Parmesan, grated
1/2 tsp salt
1/4 tsp ground pepper
Olive oil spray
Step 1: Preheat oven to 200°C. Line a baking tray with baking paper and spray oil.
Step 2: Beat eggs in a large mixing bowl.
Step 3: Mix all the other ingredients together in another mixing bowl.
Step 4: Coat each fish fillet with a layer of beaten egg, followed by a layer of crumbed mixture.
Step 5: Place each crumbed fillet onto baking tray.
Step 6: Spray all with olive oil, before transferring tray into oven.
Step 7: Bake for 25 minutes or until cooked and golden.
Step 8: Serve with tartare dipping sauce.
