Fish Fingers

PREP TIME: 10min

COOK TIME: 25min SERVES: 4

INGREDIENTS:

  • 700g flathead tails, filleted

  • 2 eggs

  • 1 teaspoon garlic, minced

  • 1 cup panko breadcrumbs

  • ⅔ cup Parmesan, grated

  • 1/2 tsp salt

  • 1/4 tsp ground pepper

  • Tartare sauce

  • Olive oil spray


METHOD:

  • Step 1: Preheat oven to 200°C. Line a baking tray with baking paper and spray oil.

  • Step 2: Beat eggs in a large mixing bowl.

  • Step 3: Mix all the other ingredients together in another mixing bowl.

  • Step 4: Coat each fish fillet with a layer of beaten egg, followed by a layer of crumbed mixture.

  • Step 5: Place each crumbed fillet onto baking tray.

  • Step 6: Spray all with olive oil, before transferring tray into oven.

  • Step 7: Bake for 25 minutes or until cooked and golden.

  • Step 8: Serve with tartare dipping sauce.
