INGREDIENTS:
500g mince beef
700g passata
400g tin of diced tomatoes
½ cup water
1 large onion, finely diced
2 garlic cloves, crushed
3-5 basil sprigs, chopped
3 tbsp olive oil
500g Lasagne sheets
500g Mozzarella cheese, grated
125g, Parmesan, grated
2 eggs, beaten
1 tbsp salt
1 tsp ground pepper
Spray Olive oil
METHOD:
Step 1: Heat oil in a large non-stick fry pan over low-medium heat.
Step 2: Gently fry mince with onion and garlic, until browned.
Step 3: Add passata, diced tomatoes, water, basil, salt and pepper.
Step 4: Simmer over a low heat for 15 minutes, stirring occasionally.
Step 5: Meanwhile, preheat oven to 180°C and line a large baking dish with spray oil.
Step 6: Remove fry-pan from heat. Using a ladle, place one ladleful of meat sauce into the baking dish. Spread sauce evenly around the dish using the back of the ladle.
Step 7: Place one layer of Lasagne sheet across the bottom of the dish.
Step 8: Spread another ladleful of meat sauce on top of the first layer of Lasagne sheet. Then sprinkle 4 tbsp of Mozzarella and 2 tsps Parmesan evenly over the sauce. Use a fork to drizzle beaten egg over the sprinkled cheese and top with another layer of Lasagne sheet.
Step 9: Repeat Step 8, until the layers reach the top of the baking dish. Sprinkle extra Mozzarella over the top layer.
Step 10: Cover the baking dish with cooking foil and bake for 30 minutes covered. Remove the foil and bake for another 10 minutes uncovered.
