INGREDIENTS:
450g microwavable white rice
2 cups mixed frozen vegetables (corn, carrots, peas)
2 spring onion, thinly sliced
50g bacon, diced
2 tbsp vegetable oil
¼ cup water
2 tsp soy sauce
½ tsp ginger powder
½ tsp garlic, minced
1 egg, lightly beaten
Salt
Pepper
METHOD:
Step 1: Heat the vegetable oil, water, ginger and garlic in a large non-stick frying pan over medium heat.
Step 2: Meanwhile, steam the rice in the microwave as per packet instructions.
Step 3: In the hot pan, fry the vegetables and bacon for 5 minutes and then push mixture to one side of the pan.
Step 4: Lower the heat and add the beaten egg to the empty side of the pan to make a pancake. Cook both sides of the egg pancake and then slice up the egg in the pan. Toss the sliced egg through the bacon and vegetables.
Step 5: Add the soy sauce to the pan, followed by the spring onions and steamed rice. Fry the rice with the other ingredients for 3 minutes.
Step 6: Season fried rice with salt and pepper to serve.
