Easter Egg Nest Cake

PREP TIME: 15min

COOK TIME: 45min SERVES: 10-12

INGREDIENTS:


Chocolate Cake

  • 100g butter, melted

  • 2 cup caster sugar

  • 4cups self rising flour

  • 2 cup milk

  • 6 tbsp cocoa

  • 2 tsp vanilla essence

  • 4 eggs

  • Spray oil

Easter Icing

  • 3 cups icing sugar

  • 1/2  cup milk

  • 4 tbsp cocoa

  • 200g  flaked chocolate

  • 100g pretzel sticks

  • 100g coloured chocolate Easter eggs.


METHOD:

  • Step 1: Preheat oven to 180°C.

  • Step 2: Grease a 24cm round bundt cake pan with spray oil.

  • Step 3: Combine the butter, sugar, flour and milk in a large mixing bowl. Mix together well.

  • Step 4: Add the vanilla essence and the cocoa and beat mixture until smooth.

  • Step 5: Pour mixture into the prepared pan. Bake for 40-45 minutes. 

  • Step 6: Allow the cake to cool on a cooling rack before icing.

  • Step 7: Prepare the icing mixing the icing sugar, cocoa and milk together, until smooth. Fold through the flaked chocolate. 

  • Step 8: With a spatula evenly spread the icing over the top of the cake and around the sides.

  • Step 9: Decorate the centre of the cake with pretzel sticks and Easter eggs.
