Easter Bunny Pancakes

INGREDIENTS:

Pankcakes

  • 2 cups self-rising flour

  • 2 eggs

  • ¾ cup sugar

  • 1 tsp vanilla essence

  • 1¾ cup milk

  • Spray oil

Toppings

  • 2 kiwi fruits, grated

  • 1 banana, sliced

  • 1 yellow peach, sliced

  • 1 plum, sliced

  • ¼ cup sultanas

  • 200mL dollop cream

  • ½ icing sugar

METHOD:

  • Step 1: Whisk flour, sugar, eggs and vanilla essence in a mixing bowl.

  • Step 2: Gradually whisk in milk to form a smooth mixture.

  • Step 3: Heat a large nonstick frying pan over low heat.

  • Step 4: Grease pan with spray cooking oil.

  • Step 5: Each bunny requires 1 cup of mixture to create 1 large circle pancake (body), 1 medium circle pancake (head) and 4 small oval pancakes (ears and feet).

  • Step 6: Cook each pancake on greased pan until bubbles appear, then flip until cooked through.

  • Step 7: Arrange pancakes into the shape of a bunny and decorate with sliced fruit, sultanas, dollop cream and icing sugar.
