Crunchy Potato Bake

PREP TIME: 30min

COOK TIME: 1.5hrs SERVES: 6

INGREDIENTS:

  • 1kg washed potatoes, thinly sliced

  • 100g butter melted

  • 3 tbsp olive oil

  • 3 cups breadcrumbs

  • 2 cup parmesan cheese

  • 1 tbsp garlic, minced

  • ½ tbsp salt

  • ½ tsp ground pepper

  • Olive oil spray


METHOD:

  • Step 1: Preheat the oven to 180°C.

  • Step 2: Combine the butter, oil, 2 cups breadcrumbs, 1 cup parmesan, garlic, salt and pepper in a large bowl. Toss the potatoes through until well coated.

  • Step 3: Layer the potatoes in a large baking dish. Cover dish with aluminum foil.

  • Step 4: Bake for 1 hour. Remove the foil and sprinkle the remaining 1 cup breadcrumbs and 1 cup parmesan cheese over the top. Spray generously with olive oil.

  • Step 5: Cook uncovered for a further 30 minutes or until the top is brown and crispy.
