1kg washed potatoes, thinly sliced
100g butter melted
3 tbsp olive oil
3 cups breadcrumbs
2 cup parmesan cheese
1 tbsp garlic, minced
½ tbsp salt
½ tsp ground pepper
Olive oil spray
Step 1: Preheat the oven to 180°C.
Step 2: Combine the butter, oil, 2 cups breadcrumbs, 1 cup parmesan, garlic, salt and pepper in a large bowl. Toss the potatoes through until well coated.
Step 3: Layer the potatoes in a large baking dish. Cover dish with aluminum foil.
Step 4: Bake for 1 hour. Remove the foil and sprinkle the remaining 1 cup breadcrumbs and 1 cup parmesan cheese over the top. Spray generously with olive oil.
Step 5: Cook uncovered for a further 30 minutes or until the top is brown and crispy.
