SERVES: 6-8
INGREDIENTS:
2 baby Cos lettuces, shredded
¼ red cabbage shredded
1 carrot, shredded
1 large bunch coriander, roughly chopped
100g packet fried noodles
½ cup hazelnuts, crushed
½ cup Almond flakes
Asian style dressing
½ cup extra virgin olive oil
2 tbsp soy sauce
⅔ cup balsamic vinegar
1 tsp salt
METHOD:
Step 1: Combine lettuce, cabbage, carrot, coriander, noodles, hazelnuts and almond flakes in a large salad bowl.
Step 2: Place all dressing ingredients in a small mixing bowl. Stir together until well combined.
Step 3: Dress salad just before serving Drizzle Asian style dressing over salad, tossing together well.
