Crunchy Asian Noodle Salad

PREP TIME: 15min

SERVES: 6-8


INGREDIENTS:

  • 2 baby Cos lettuces, shredded

  • ¼ red cabbage shredded 

  • 1 carrot, shredded

  • 1 large bunch coriander, roughly chopped 

  • 100g packet fried noodles

  • ½ cup hazelnuts, crushed

  • ½ cup Almond flakes

Asian style dressing 

  • ½  cup extra virgin olive oil

  • 2 tbsp soy sauce

  • ⅔ cup balsamic vinegar 

  • 1 tsp salt


METHOD:

  • Step 1: Combine lettuce, cabbage, carrot, coriander, noodles, hazelnuts and almond flakes in a large salad bowl.

  • Step 2: Place  all dressing ingredients in a small mixing bowl. Stir together until well combined.

  • Step 3: Dress salad just before serving Drizzle Asian style dressing over salad, tossing together well.
