Crumbed Avocado Chips

COOK TIME: 20min SERVES: 4

INGREDIENTS:

  • 2 avocados, sliced thick

  • 1 egg, beaten

  • 1 cup breadcrumbs

  • ½ cup parmesan, grated

  • ½ tsp salt

  • Spray oil


METHOD:

  • Step 1: Preheat oven to 180°C.

  • Step 2: Line a baking tray with baking paper and spray oil.

  • Step 3: Beat an egg in a small mixing bowl.

  • Step 4: In another small mixing bowl, combine the breadcrumbs, parmesan and salt. Mix well.

  • Step 5: Slice the avocados into thick chip slices.

  • Step 6: Diip each slice of avocado into beaten egg, and then coat in the breadcrumb mixture.

  • Step 7: Lay all breadcrumbed slices of avocado on the lined baking tray and spray with spray oil.

  • Step 8: Bake for 10-15 minutes.
