2 avocados, sliced thick
1 egg, beaten
1 cup breadcrumbs
½ cup parmesan, grated
½ tsp salt
Step 1: Preheat oven to 180°C.
Step 2: Line a baking tray with baking paper and spray oil.
Step 3: Beat an egg in a small mixing bowl.
Step 4: In another small mixing bowl, combine the breadcrumbs, parmesan and salt. Mix well.
Step 5: Slice the avocados into thick chip slices.
Step 6: Diip each slice of avocado into beaten egg, and then coat in the breadcrumb mixture.
Step 7: Lay all breadcrumbed slices of avocado on the lined baking tray and spray with spray oil.
Step 8: Bake for 10-15 minutes.
