INGREDIENTS:
2 cups quick cook rolled oats
1 cup dried cranberries
4 tbsp honey
4 tbsp butter
1 tbsp brown sugar
1 tsp vanilla essence
3 tbsp pumpkin seeds
METHOD:
Step 1: Combine honey, sugar, butter and vanilla essence together in a microwave safe mixing bowl. Heat for 40 secs or until mixture has melted.
Step 2: Stir in rolled oats, pumpkin seeds and cranberries to honey mixture. Coating all ingredients.
Step 3: Firmly press mixture into a slice tray.
Step 4: Refrigerate for 4 hours.
Step 5: Using a sharp knife, divide into rectangular bar portions and serve.
