Cranberry Oat Bars (no-bake)

PREP TIME: 10min

CHILL TIME: 4hrs SERVES: 8

INGREDIENTS:

  • 2 cups quick cook rolled oats

  • 1 cup dried cranberries

  • 4 tbsp honey

  • 4 tbsp butter

  • 1 tbsp brown sugar

  • 1 tsp vanilla essence

  • 3 tbsp pumpkin seeds


METHOD:

  • Step 1: Combine honey, sugar, butter and vanilla essence together in a microwave safe mixing bowl. Heat for 40 secs or until mixture has melted.

  • Step 2: Stir in rolled oats, pumpkin seeds and cranberries to honey mixture. Coating all ingredients.

  • Step 3: Firmly press mixture into a slice tray.

  • Step 4: Refrigerate for 4 hours.

  • Step 5: Using a sharp knife, divide into rectangular bar portions and serve.
