1 tsp peppermint essence
2 litres vanilla ice cream
450g chocolate cookie cream biscuits
100g chocolate sprinkles
Step 1: Remove the vanilla ice cream out of the freezer and set aside to slightly soften.
Step 2: Place the chocolate cookie cream biscuits into a food processor and process into a rough crumb.
Step 3: Transfer the biscuit crumb into a large mixing bowl.
Step 4: Add the vanilla ice cream, the peppermint essence and the chocolate sprinkles.
Step 5: Using an electric mixer, mix all of these ingredients together.
Step 6: Pour the Cookies and cream ice cream into a 2.5L freezer safe container and place in the freezer to set.
Step 7: Serve, when the ice cream has firmly refrozen.
