Cookies & Cream Ice Cream


SERVES: 10-12


  • 1 tsp peppermint essence

  • 2 litres vanilla ice cream

  • 450g chocolate cookie cream biscuits

  • 100g chocolate sprinkles


  • Step 1: Remove the vanilla ice cream out of the freezer and set aside to slightly soften. 

  • Step 2: Place the chocolate cookie cream biscuits into a food processor and process into a rough crumb.

  • Step 3: Transfer the biscuit crumb into a large mixing bowl. 

  • Step 4: Add the vanilla ice cream, the peppermint essence and the chocolate sprinkles.

  • Step 5: Using an electric mixer, mix all of these ingredients together.

  • Step 6: Pour the Cookies and cream ice cream into a 2.5L freezer safe container and place in the freezer to set.

  • Step 7: Serve, when the ice cream has firmly refrozen.
