Coconut & Pineapple Slice

PREP TIME: 10min

COOK TIME: 40min SERVES: 12

INGREDIENTS:

  • 450g tinned pineapple, crushed in juice

  • 150g butter, melted

  • ⅔ cup caster sugar

  • 1 tsp vanilla essence

  • 1 tbsp milk

  • 2 eggs

  • 1 ½ cup self-rising flour

  • ¾ cup coconut, desiccated

  • ½ cup coconut, shredded

METHOD:

  • Step 1: Preheat oven to 180°C.

  • Step 2: Line a 20 x 28cm slice tray with baking paper.

  • Step 3: Place melted butter, desiccated coconut and sugar into a large mixing bowl. Mix together well.

  • Step 4: Add the eggs, vanilla essence, flour and pineapple juice. Continue to mix to combine.

  • Step 5: Pour mixture into the prepared tray and sprinkle the crushed pineapple and shredded coconut on top. Bake for 35-40 minutes or until cooked through.

  • Step 6: Allow the slice to cool on a cooling rack and then cut into squares to serve.
