450g tinned pineapple, crushed in juice
150g butter, melted
⅔ cup caster sugar
1 tsp vanilla essence
1 tbsp milk
1 ½ cup self-rising flour
¾ cup coconut, desiccated
½ cup coconut, shredded
Step 1: Preheat oven to 180°C.
Step 2: Line a 20 x 28cm slice tray with baking paper.
Step 3: Place melted butter, desiccated coconut and sugar into a large mixing bowl. Mix together well.
Step 4: Add the eggs, vanilla essence, flour and pineapple juice. Continue to mix to combine.
Step 5: Pour mixture into the prepared tray and sprinkle the crushed pineapple and shredded coconut on top. Bake for 35-40 minutes or until cooked through.
Step 6: Allow the slice to cool on a cooling rack and then cut into squares to serve.
